Coconut Oil

Benefits

Coconut oil has been demonized due to its high saturated fat content. However, coconut oil has been a dietary staple in many of the healthiest populations. Recent research shows our bodies metabolize the saturated fat in coconut oil much differently then the saturated fat in steak and cheese. The saturated fat in coconut oil are MCTs (medium chain triglycerides).  These fats are metabolized in the liver and are immediately converted into energy (fuel for the brain and muscle function) rather than being stored as fat. In this way coconut oil also assists in weight loss efforts.  We can utilize and absorb these fatty acids much better than long chain triglycerides (LCT).   It has been used to treat Diabetes, High Cholesterol, Heart Disease, Alzheimer's, Crohn's, IBS, Chronic Fatigue, Thyroid conditions, Obesity, Skin Disorders and many other conditions.

Benefits- Brain Health

Medium chain triglycerides are being intensively studied as potential therapeutic agents in Alzheimer’s disease.  Studies have shown that coconut oil can dramatically increase cognitive function.  Healthy fats play a role in neurotransmission and the production of your "feel good" neurotransmitters like serotonin and dopamine and norepinephrine. Low levels of fat in your diet is linked to depression.

Benefits-  Beat Sugar Cravings

Eating healthy fats is more satiating than carbs  so you won't get that extreme hunger that oftens sends us right to the cookie jar. Having the right balance of fats, protein and carbs can help you end the sugar roller coaster many of us battle. It also naturally boosts metabolism.

Benefits- Skin

Every night,  I rub virgin coconut oil on my face, neck and hands. It is very hydrating for the skin. It also keeps the skin's connective  tissues strong, which prevents sagging and wrinkles. Apply coconut oil directly to your skin to soften the appearance of fine lines or use it daily on your face and body for a healthy glow. Be sure you use organic virgin coconut oil with no additives.

I add coconut oil to my smoothies. It withstands heat better than most oils so substitute coconut oil in many of your favorite recipes.  I use it when roasting vegetables and when making baked goods. Also, great to scrape off coconut flakes into salads. When baking, often best to melt first due to its congealed consistency.
